Lomo Saltado (Beef and French Fry Stir Fry)

Marinated sirloin steak is stir fried with tomatoes and onions, then tossed with French fries and served over rice.

Ingredients

Steak and Marinade

  • 2 pounds sirloin steak, thinly sliced
  • 1/2 cup low sodium soy sauce
  • 1 1/2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon dried oregano
  • black pepper

Fries

  • 2 large white potatoes, peeled if you prefer, cut into thin fries
  • 2 tablespoons olive oil
  • salt and pepper

Stir Fry

  • 2 tablespoons grapeseed or canola oil, divided
  • 1 red onion, thinly sliced
  • 3-4 (depending on size) tomatoes, cut into wedges
  • 1 tablespoon low sodium soy sauce
  • 1/2 tablespoon red wine vinegar
  • salt and pepper
  • 4 cups cooked rice, for serving
  • chopped cilantro, parsley, and green onions for garnish

Instructions

  1. Marinate steak: In a large Ziploc bag, combine all steak and marinade ingredients. Seal bag and shake so meat is evenly coated. Put in the fridge to marinate for 1 hour to overnight.
  2. Bake fries: Preheat oven to 425 degrees. Spray two sheet pans generously with cooking spray. Divide potatoes between 2 pans. Drizzle 1 tablespoon olive oil over each pan. Season with salt and pepper. Toss potatoes so they get evenly coated with oil and seasoning. Lay out in a single layer on each pan. Bake for 10 minutes, then flip over and bake for 10-12 more minutes, until fries are browned and slightly crispy.
  3. While fries are baking, cook steak: Heat 1 tablespoon grapeseed or canola oil in a wok or large nonstick skillet over medium high heat. Remove steak from marinade and discard leftover marinade. Add steak to wok and cook, stirring occasionally, until browned, 5 to 8 minutes. Remove steak to a plate.
  4. Finish stir fry: Heat second tablespoon oil in the wok over medium high heat. Add onion and cook, stirring occasionally, until softened, 5 to 7 minutes. Add tomatoes and cook for 1 minute. Add beef back to the wok with tomatoes and onions. Add 1 tablespoon soy sauce, ½ tablespoon vinegar, and salt and pepper. Cook for 1 more minute.
  5. To serve: Mix fries in with stir fry. Divide cooked rice between serving plates. Top with stir fry mixture. Garnish with chopped cilantro, parsley, and green onions.
